Last night I made the most delicious supper. It is an adaptation of Dutch Baby which is a Dutch breakfast that is delicious. I do not remember eating these in Holland when we were back packing our way through Europe but we were more on a bread and cheese diet as I recall, punctuated by Heineken and the odd croquette. This makes a light supper or brunch dish. There is a comforting taste about it quite different from an omelette or a souffle. I served this with asparagus and salad.
Maryanna's Baby (serves two)
2 eggs
1/2 c. of half and half cream
1/2 c. flour
salt, pepper
2 tbsp. chopped green scallions
1/2 c. chopped pollock or crab
1/4 c. grated parmigiana
Preheat a 10 inch cast iron frying pan in a 475 oven. In a bowl whisk the eggs and cream until light and then gradually add the flour, then the rest of the ingredients. Grease the skillet with a combination of olive oil and butter and pour the batter into it. Reduce the oven temperature to 425 and bake until puffed and lightly browned, about 10 minutes. Serve immediately.
